Banana blossom recipe: unique tasty vegetarian burger

I was a bit sceptical at first with this banana blossom recipe. I wasn’t too sure it would be tasty, but after trying everything matched: taste, texture, and smell. If you have a banana blossom and you’re not sure what you want to make out of it, a burger would be an excellent choice. Great for any time of the day and also brings comfort.

Banana flower or blossom, grows as you can guess it, on the banana tree. It’s purple by colour and grows below the bananas.

It’s packed with lots nutrients and essential minerals for your body as well. In Southeast Asia this ingredient is easy to get, for me it was growing around the corner. In Europe or America, I can imagine some store importing goods from Asia would have it. It’s described as a Banana heart and it’s fleshy part of bracts. (wiki)

Ingredients

  • Banana flower
  • 1/2 cup all purpose flower
  • 1 egg
  • 1 1/2 tsp salt
  • 2 tsp pepper powder
  • 2 teaspoon mushroom powder seasoning
  • 2 tsp red/brown sugar
  • 1 tbs garlic powder
  • Onion
  • Tomato
  • Burger buns
  • Mayonnaise / Ketchup / Mustard sauce

Most of the ingredients are easy to obtain. I use mushroom powder as a seasoning. If you don’t have access to this, you can use an alternative seasoning powder that you like.

Prepare the banana blossom

Wash the banana flower. The outside part I remove. I can imagine when you buy it, it’s already removed. After washing cut it in slices. Since the banana flower is in a layers, you can chop it in smaller pieces easily. It doesn’t need to be super small, I actually leave it in chunks.

after cutting, prepare a steamer. there should me more than enough water for 10 minutes of boiling. That’s how long the banana flower is going to be steamed. After steaming, open the lid and wait several minutes until it’s cooled off.

When it’s cooled off, it’s time to squeeze the excessive moist out. grab a bunch with the bare hands and squeeze. I am not trying to remove all the water, just the bit the comes out easily by squeezing. Put it in a seperate bowl large enough to put in all the ingredients.

Seasoning your burger

This part is easy, just add all the ingredients: all purpose flower, egg, salt, pepper powder, teaspoon mushroom powder seasoning, red/brown sugar and garlic powder. When this is all in a bowl together, it’s time to mix and massage everything in. Take some time to do it, and you’ll make a mush out of it. When everything is well mixed by hand you can make some burger patties.

Fry the burger patties brownish like in the picture. You should be able to smell something nice & fried. Flip occasionally, and be gentle because it can break easier then normal. When both sides are well fried it’s time to prepare your burger buns.

prepare the buns to your own preference. I use mayonnaise, onion and some tomatoes. You can do this part to your own preference. If you are adventurous, you can spice it up with the garlic chili sauce.

Going Vegan?

You would need to replace the mayonnaise and egg. The egg is used as binder. Other common binders that you can use bread crumbs and ground flaxseeds. Perhaps you can use a bit vegetable oil as well.
