Crispy fried oyster mushroom recipe

For this recipe, I went out to an organic farm in Bali that also makes oyster mushrooms. These are grown in a damp and dark place. The farm had a cellar for this with a bamboo structure holding everything in place to grow oyster mushrooms efficiently.

There are recipe instructions with a video. It’s easy to follow and will help you make crispy fried oyster mushrooms.

It’s a lot cheaper to buy at the farm for me than at the local warung (store) or supermarket. Besides that, I get to support a group who set up this farm in order to help others.


  • 250 gr Oyster mushrooms
  • 1 cup flour
  • 3 tbs corn starch
  • pepper
  • garlic powder
  • mushroom powder seasoning
  • pinch salt
  • frying oil

For the spicy topping which is optional we require:

  • 5-7 cloves of garlic
  • long curly chili
  • spring onions

The ingredients are easy to come by. If you can’t get the mushroom powder seasoning, it’s ok to leave this one out or replace it with another seasoning you like. It just gives that little but of extra mushroom seasoning taste.

For the first bowl, add all the dry ingredients: flour, corn starch, pepper, garlic powder, mushroom seasoning and salt. Mix them well. Now we will transfer about 20-30% of the bowl to a new bowl. The difference is that I am going to add water to the smaller new bowl.

When you have cleaned the oyster mushrooms shred them in bite sized pieces. It will be easier to eat that way later. Also if you don’t make them in smaller pieces, it’s hard to fry. When they are tinier, add them in the wet bowl. Make sure the batter covers the surface well. Then put it in the dry bowl, the first one. Cover the surface with the mixture. It’s ready for frying now!

How to fry oyster mushrooms

Preheat the oil, when You add the oyster mushroom covered in batter it should react immediately. If this is not happening it means the oil is not hot enough. Fry for 3-5 minutes when it’s hot. The colour should become light golden brown. The structure is a bit firm. This makes the crisp.

This is already it. Easy right? I am going to add a spicy topping to it, since I like it spicy. So at this point if you want it a little bit spicy continue the recipe or eat it as is.

Cut the long curly chili, cloves of garlic and spring onions in tiny pieces. Fry this all together. If you don’t like it too spicy, remove the seeds. It will reduce the spiciness that way. Now fry it all together for a minute. Mix it a bit and it’s ready to plate. Now not everything of the topping is mixed with the mushrooms. So just add these on top.

Another tip: don’t put the topping on all the mushroom. Have a bit without, so you can taste it more natural and notice the difference.

  • 250 gr Oyster mushrooms
  • 1 cup flour
  • 3 tbs corn starch
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp seasoning I use mushroom powder
  • 1 pinch salt
  • 5-7 cloves garlic
  • 3 pieces curly chili
  • 1 spring onion
  • Frying oil


  • clean the oyster mushroom first and peel them in to bite sized pieces
  • prepare 1 bowl for the dry batter. Mix the flour, corn starch, pepper, garlic powder, seasoning and pinch of salt together
  • Transfer 20-30% of it to another smaller bowl and add some water
  • Dip the oyster mushrooms in the wet batter and than cover it in the dry batter
  • Pre-heat the oil
  • Fry it in hot oil for 3-4 minutes till it's crispy and light golden brown
  • Optional for the spicy topping:
  • Cut the garlic, chili and spring onions in tiny pieces. Fry it for a minute
  • Add the fried mushrooms, and mix the toppings in between
  • Plate the mushroom, and add the topping to the mushrooms.
