Nasi Tempong Banyuwangi

A famous dish from Indonesia is the Nasi Tempong. This is a typical food from the Javanese people in Banyuwangi. It is very simple: Steamed rice, boiled vegetables tofu tempeh some fish and sambal. Meat is optional but it does make a great addition.

The word Tempong comes from the Osing language (spoken in Banyuwangi) and it means “To be slapped”. Beware if you are inexperienced in the art of eating spicy. The spicyness of the dish gives the sensation of being slapped! (source: Wikipedia Nasi Tempong)

It takes about 1 hour to make this dish. So it’s great if you can make it for multiple servings or people.


  • Yellow spice chicken recipe:
    • 2 Chicken upper thighs
    • 5 cloves of garlic
    • 8 spring shallots
    • 2 cm turmeric
    • 1/2 tablespoon salt
    • 1/2 tablespoon coriander
    • 1/2 tablespoon granulated sugar
    • 800 ml of water
  • Sambal recipe for Tempong rice
    • 8 curly chilies
    • 2 bird’s eye chilies
    • 1/2 teaspoon salt
    • 1 tablespoon sugar
    • 1 tsp shrimp paste
    • 4 heirloom tomatoes (can be replaced by regular tomatoes)
  • 2 cups of cooked rice

Washing the vegetables needed for Nasi Tempong

Cooked vegetables is an important ingredient for Nasi Tempong. But before we start cooking, we’re cleaning them. I am harvesting most of the vegetable fresh from my organic garden, it can’t get any fresher than this. But washing them goes without saying. This is just to prepare when I am going to cook them.

Prepare pestle and mortar or whatever you use to grind

Grind the garlic, onions and turmeric salt coriander sugar all together. it should become some yellow paste like in the picture. It takes several minutes to get to this. The turmeric makes it all look like a yellow mush.

When you’re done grinding, add it to a wok with hot oil. We’re going to fry it. This is only for just a minute, then we add our chicken thighs. Just fry it shortly on both sides. You can sear it if you want. After this I am adding the water (800ml) and tempeh and tofu. This all cooks for about 40 minutes with the lid on. Make sure there is a tiny opening, for the water to evaporate.

After 40 minutes, you can see that the water reduced and everything has a nice yellow color.

Fry it! Otherwise the taste won’t be like Nasi Tempong

Ok, we are going to fry all the protein we just cooked. Yes, they’re all cooked and ready to eat. But we want the taste that makes it Nasi Tempong. So grab the chicken, tempeh and tofu. We’re going to fry it. After that, we’ll fry the fish.

The reason why we are not frying the salty fish with the rest is the taste. We don’t want our chicken, tofu or tempeh all to taste like salty fish right. The oil too will have the taste so fry the fish as last.

So the result looks like this now. Nice color and texture. It is not required to fry it for long because they were cooked alreay for 40 minutes.

Most import part of Nasi Tempong: Sambal

Like wiki says, we’re going for that punch effect. Add all the Chili’s, shrimp paste salt and sugar on the grinder. Grind this to a mush. If you want to reduce the pain from the spicyness, add tomatoes. The more you add the less the intensity of the spicy. Still with 4 tomatoes, it was pretty spicy. We didn’t forget the vegetables

This is a fast and easy part. Just boil them in water. The eggplant should be sliced in pieces. This goes 5 minutes in boiling water. The amaranth or green leave vegetables should only be boiled for 1 minute.

The taste won’t be bland at all because Nasi Tempong will bring all the flavors together.

Yellow spice chicken recipe:

  • 2 chicken thighs (upper part)
  • 5 cloves garlic
  • 8 spring shallots
  • 2 cm turmeric
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp coriander
  • 800 ml water

Sambal recipe for Tempong rice

  • 8 curly chilis
  • 2 bird's eye chilies
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 tsp shrimp paste
  • 4 tomatoes
  • 2-3 cups cooked rice


  • Prepare by washing the vegetables first
  • Grind the spices in a pestle/mortar from the spice chicken ingredients. They are the garlic, onions and turmeric salt coriander sugar. It should become a yellow mush.
  • Fry the ground spice mix and add chicken. Fry this chicken on each side for a minute and then add water, tempeh and tofu.
  • boil this for 40 minutes with a lid on with low fire
  • After the boiling is done, grab the meat, tempeh and tahu. Fry them in hot oil. They are already cooked we are just adding a crunchier layer. It doesn't take long.
  • Fry the salty fish after the chicken, tempeh and tofu.
  • Ad all the sambal ingredients together in the pestle and grind it with the mortar. The ingredients are: curly chilis, bird's eye chili, salt, sugar and shrimp paste. Add tomatoes to make it less spicy.
  • Boil the green leave vegetable for 1 minute and the eggplant for 5 minutes.
  • Plate it with the rice in the middle.
