Pizza in pan recipe from 2-star Micheline chef REVIEW

For my first recipe review, I took something that caught my eye on YouTube. A former 2 Micheline star chef is having a fun cooking show and divided into 3 videos how to make a pizza in a pan (without an oven). I was more impressed by a 2 Micheline star chef sharing such a beloved recipe. Everyone likes pizza right?

I changed some of the ingredients to make this pizza in a pan. The only things I changed are the toppings, as I had most of the things already at home. I am sure that you can replace the pan with a oven if you have one.

I will divide this pizza in pan recipe in 3 parts: Making the dough, the sauce, and making all of it into a pizza.


  • Pizza Dough
    • 2 cups (unbleached) flour
    • 1 tsp salt
    • 2.5 tsp olive oil
    • 1.5 tsp (active) yeast
    • 2 tsp sugar
  • Pizza Sauce
    • 1/2 medium sized onion
    • 8 garlic cloves
    • 60 ml olive oil
    • ripe tomatoes
    • tomato paste
    • black pepper
    • 5 tsp sugar
    • water
    • vegetable stock powder
    • thym / basilicum / oregano
  • Pizza toppings
    • 2 cheeses
    • meat
    • mushrooms
    • whatever you like on it!

The pizza sauce is also great for spaghetti, lasagna and other recipes. To finish the sauce for pizza it is optional to use a hand blender at the end of making the sauce to make it smooth. The chef in the video did it, I am however not going to do it.

Making pizza dough

It’s not a lot what you need to make the pizza dough and it’s very easy. Let me walk you through the steps. We’ll start with mixing the (1.5 tsp) yeast, in half a cup of water with (2 tsp) sugar. Dissolve this by stirring it. Yeast works best between 32-35 degrees Celcius (or 90-95 Farhenheit). So don’t go overboard with boiling water or having it freezing cold.

Make sure you have a big bowl or a place to mix the (2 cups) flour with (1 tsp) salt and some (2-3 tsp) olive oil.

Since I am using active yeast to make the pizza dough I can already start with adding the water with yeast and sugar mixture to the dough. Slowly pour it (not all at once) and start mixing it in the flour.

Kneed for several minutes and make sure to stretch the gluten. and make a ball or cut it into 6 equal pieces make the dough as smooth as possible. You can easily make 6 x 28cm in diameter pizzas with this. roll them into balls and let the yeast do it’s magic. It should become fluffy soft round ball. This means we have time to make the pizza sauce.

Making pizza sauce

Making your own pizza sauce, can be more tastier than you’d think. The base is onion, garlic, herbs and tomato paste. Chop everything as small as possible since we are making a sauce. The tomatoes can be cut into small cubes, and these will dissolve during the cooking process.

Add the (olive) oil in a pan, and when this is hot enough, add the garlic and onion. When these are about to get some brown colour, add the tomato paste and cut tomatoes, vegetable stock and sugar. The sugar is to reduce the acidic taste from the tomato paste and tomatoes. Keep the fire between medium and low and make sure that ingredients are well stirred. When everything is added just stir it and boil it for few minutes and let it cool off. While it is cooling off we’ll continue with the dough again. When the pizza sauce is cooled off, use a hand blender to make the sauce cool. I don’t have it so I didn’t do it.

Making the pizza bottom

From the dough, it should be fluffy, soft. Grab 1/6 part of the total dough and roll it in a ball if you haven’t done that yet. Use a dough roller to make the pizza bottom. It should be circle slightly more than 28cm or the size of your pan

Half a centimeter from the edge you start flipping the dough around. Like in the picture and press it in so it would stick. This is going to be the crust/edge of your pizza. With a fork, poke plenty of wholes everywhere on the dough. Add this dough in the pan for 4 minutes and flip it for another 4 minutes. Your pizza bottom is now done and should look like this:

The sauce should be cooled off by now, so it’s time to fill the pizza with the toppings. Add a layer of the tomato paste, followed by some cheese. Use 2 different cheeses to get that extra cheesy effect. Now add some meat, or mushrooms, or whatever you like to the pizza. It’s going to be delicious!

Add the pizza in the pan with a lid. It takes about another 10 minutes for it to be done. Here are 2 examples of what I made with this recipe.

I got to work on food presentation skill. But it was very easy to make and some of the ingredients (toppings) can be swapped for others. I find this recipe very flexible to follow. It was my first time making pizza and I did not do any special shopping for it I just took the ingredients I already had and started making the pizza. It took me a total of 2 hours from start to finish for my first pizza.

As soon as you got the dough baked for 4 minutes on each side you can start immediately with producing pizzas rather quickly.

I would recommend this recipe to everyone wanting to make pizza and have no oven. It’s easy and delicious! Also a lot cheaper than buying pizza. Have a look at i Chef Richard YouTube channel.

Pizza dough

  • 250 gr meat / sauge / chicken / salami
  • 250 gr mushrooms
  • toppings of your chocie


The dough

  • Mix water with yeast and sugar. Dissolve this mixture
  • Add 2 cups of flour in a bowl. Add olive oil, salt and the mixture from previous step
  • Kneed the dough for several minutes. Mix everything and stretch the gluten. I myself kneed for about 10 minutes.
  • Roll the dough and cut into 6 equal pieces. Roll these in to a ball.

Making the Sauce

  • Cut the onion, garlic and herbs into very tiny pieces. Cut the tomatoes as well, these don't need to be that small
  • Pre-heat the olive oil, and add the onion and garlic
  • When the onion an garlic start to become brown, add the tomato paste, tomatoes, and herbs.
  • Let it boil for more than several minutes or until the tomatoe cubes are dissolved,

The pizza bottom

  • The rolled dough balls should be fluffy by now. With a dough roller make a a shape of the pizza bottom. Roll 1/2 cm form the outside inside and then start poking holes with a fork
  • Heat the pizza dough 4 minutes on each side with medium fire

  • add a layer of pizza sauce on the pizza dough you just finished
  • Add cheese and topping of your choice
  • Heat the pizza in a pan with a lid on low fire for 10 minutes, or when cheese is molten
